Ethiopian Organic Floral Specialty Coffee
Introducing "Ethiopian Organic Floral Specialty Coffee" - a captivating coffee from the heart of Ethiopia's Yirgacheffe region.
About the Coffee Nestled in the renowned Worka Chelbesa kebele of Gedeb woreda—the southernmost part of the Gedeo zone in Yirgacheffe—this coffee flourishes beneath a lush, dense semi-forested canopy of ensete trees and natural shade plants. The local wet mill, established in 2019 and operated by Negusse Debela, is on a mission to source the freshest coffee cherries from hundreds of dedicated smallholders across the village and nearby sub-areas like Danche.
In fact, over 760 producers cultivating local Wolisho and Dega landrace varieties have contributed to crafting this premium Grade 2 washed coffee. Classified with an SCA score between 80 and 84.75, its quality rivals Grade 1 lots. Cherries are manually harvested and hand-sorted before processing. The secret behind its exceptional quality lies in the mill's ceramic fermentation tanks, where pulped coffee undergoes a 72-hour wet fermentation. These ceramic tanks retain optimal heat, quicken fermentation, and significantly enhance the clarity of the final cup. After fermentation, the coffee is washed in channels, density-sorted, soaked for two hours to complete the fully washed process, and dried on raised beds for 10 days before a final hand-sorting prior to export.
